Honey Vanilla Cupcake Recipe (Makes 12 Cupcakes)

Ingredients:

  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions:

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a medium bowl, mix together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together butter and honey until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk.
  6. Fill the cupcake liners 2/3 of the way full with batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  8. Allow cupcakes to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
